WINE-MAKING PROCESS
The choice of harvesting by hand,
using 20kg baskets, is backed up by two main reasons: The first
and most important one is to dispose of those grapes which, at
first sight, don’t show to meet the quality standards; the second
one, to avoid breaking the grapes.
The selected grapes soak for 24 hours. Then, the bloom grape
juice is extracted to stainless steel deposits where the fermentation
is carried out at low temperatures to avoid losing aromatic
compounds.
COLOUR
Straw yellow with green iridescences. Bright and clean
colour.
AROMA
High aromatic potential. It is very rich in pip fruit
(apples and pears), citric and tropical nuances.
FLAVOUR: It is fresh in mouth, with a pleasant acidity. Fruity,
sweet and unctuous wine with persistent flavours and a nice aftertaste
feeling.

tannins. Harmonious and warm wine, with a perfect balance
between ripe fruit and oak wood.

palate. The flavours have become mature with the time and they
add fineness and elegance to the wine. The pleasant final feeling
remains for a while with wood and fruit notes.

Bodegas Cicerón

The winery was buit up in 2001, which was also the year of our first harvest. It has a capacity of 450.000 liters, although we elaborate just 250.000 kg of grapes, all of them grown in our own vineyards.
The winery is an eight-sided building, with a central open space where the wine deposits are located. Then, one of the eight sides are set aside for the barriques area, the bottles area, the bottling room, the warehouse, the tasting space, the laboratory and the offices and reception.

Our most ancient reference in the wine-making activity was in 1888, when our grandfather Vicente elaborated a wine which was awarded during
the Universal Exhibition in Barcelona.
The Vineyard
Aldeanueva de Ebro
The vineyards are located in the skirts of mount Yerga at a height of about 450-500 metres over the sea level on clay and limestone soils. The average age of the vineyards are about 30-years-old, although there are 60-years-old grapevines and some new ones, depending on the fields and the varieties. In our fields, we grow the white grapes Tempranillo blanco, Viura and Sauvignon blanc. The red varieties we cultivate are Tempranillo, Garnacha, and the autochthonous Graciano and Mazuelo.
